It catalyzes starch into simple compounds. Serum amylaze is naturally found in animals and plants.&lt;/span&gt;  It can be stated that serum amylase is a name for group of enzymes which are used for catalysing hydrolysis into sugar. Which is then used to produce carbohydrate derivatives.
